Qualifications enhance Canford Catering Staff skills

Food and Nutrition

As part of Canford’s commitment to investing in and developing staff development, we are delighted to announce success for our catering staff in recent Food and Nutrition courses. 

Staff took advantage of the lockdown period to develop their skills and knowledge, and many congratulations go to the management team and catering staff who have all gained the Highfield Level 2 award in Food Allergen Awareness and Control in Catering.  An additional well done to four senior chefs who have subsequently achieved their Highfield Level 3 Nutrition qualification. Highfield is a top 5 awarding organisation in the UK and their qualifications are highly respected in the catering industry.

Our Head Chef and Sous Chefs; Kev Drake, Eugen Dvorsky and Rob Bryan achieved their Level 3 success at the end of April. The course content included essential knowledge and understanding of healthy food choices, planning and adapting diets to suit various age groups and health conditions, micro and macro-nutrients, factors affecting food choices, allergies as well as intolerances, and necessary elements of communicating and promoting healthy diet principles.

Catering Services Manager, Kelly King, said:

“It seems such a long time ago when the Catering Department commenced on their journey by enrolling on an externally provided Allergen course carried out in the awe-inspiring environment of the John of Gaunt’s chamber! This involved the team studying for the full week on all aspects of Allergens with a summative nail-biting assessment at the end. Fortunately, and with great relief by some of the team everyone successfully passed a level 2 in Highfield Level 2 Award in Food Allergen Awareness and Control in Catering. The additional knowledge is now being used to ensure we do our upmost to support the Canford Community on this vitally important aspect of catering.”

Billy Storrs, School Services Manager, added:

“The Catering team have been admirable in their approach and professional conduct in embracing the restrictions and challenges of Covid-19, by remaining flexible, proactive and routinely delivering tasty and nourishing food to pupils and staff during the last tumultuous year. The department have also been actively supporting our local community during the lockdown.  After liaising with our food suppliers, they assisted in providing food parcels and sending out themed cakes for special occasions such as birthdays and Easter treats to brighten individual lives during the darkest days.  It was so rewarding to be part of this initiative and we hope it really made a positive difference to the community in those unprecedented times. 2021 has certainly brought about renewed hope, and a sense of getting through the challenges together. It has been so nice to see the school slowly springing back to some kind of normality, albeit a way to go yet!  I am delighted that members of the catering staff took advantage of the period to complete further training and passing with flying colours.  I feel very proud of them all in the way they have embraced this opportunity so positively.  We now look forward to, government-restrictions easing further and an exciting end to the academic year with as many of the usual celebrations as we safely can. We wish everyone associated with Canford a very safe, happy, and joyous summer ahead.”

The Catering team is now looking forward to putting what they have learned into practice by supporting the summer end of term celebrations and festivities and thinking of ways to further develop the catering service.
